Turkey Meatballs with Spaghetti Squash

 
Ingredients
  • 1 zucchini
  • 1/4 onion
  • 4 garlic cloves
  • 1 lb lean ground turkey
  • 1 egg white
  • 1/2 cup breadcrumbs
  • 1 tbsp Worcestershire sauce
  • Oregano
  • 2 spaghetti squash
  • 1 cup pasta sauce
  • 1 cup shredded mozzarella cheese
Instructions
Spaghetti Squash
  1. Preheat oven to 400°F.
  2. Poke several holes into the spaghetti squash and roast until tender (about 45 minutes).
  3. Cut lengthwise and let cool.
  4. Scrape out and discard seeds, scoop out squash with a fork.
Turkey Zucchini Meatballs
  1. Preheat oven to 400°F.
  2. Combine the zucchini, onion, and garlic in a food processor.
  3. In a large bowl, thoroughly combine zucchini mixture, ground turkey, egg white, bread crumbs, Worcestershire sauce, oregano, salt, and pepper.
  4. Form turkey mixture into about 12 meatballs.
  5. Place on a foil-lined baking sheet and bake for 20-22 minutes.
Assemble
  1. Layer spaghetti squash, pasta sauce, mozzarella cheese, and meatballs.
Reheat
Microwave/Toaster Oven, Sauté pan
